Cape Verdean Caipirinha with Grogue

Others are experienced.

The Cape Verdean Caipirinha falls into the second category.

If you’ve ever spent time in Cabo Verde, you’ve probably heard of grogue (pronounced grogg). Distilled from fresh sugarcane juice and crafted primarily on the island of Santo Antão, grogue is woven into the culture. It’s poured during celebrations, shared among friends, and enjoyed while watching the sun disappear over the Atlantic.

At Nero’s Bar, this cocktail has become one of my favorite ways to bring a little bit of the islands home.

Cape Verdean Caipirinha

What Makes It Different?

Most people are familiar with the Brazilian Caipirinha, which is made with cachaça.

This version uses Cape Verdean grogue instead.

The result is a cocktail that’s a little bolder, a little earthier, and unmistakably Cape Verdean.

The fresh lime keeps it bright, the sugar softens the edges, and the grogue delivers a character that’s hard to describe until you’ve had your first sip.

It’s simple.

It’s authentic.

And it doesn’t need a dozen ingredients to impress.

Ingredients

  • 2 oz Cape Verdean grogue
  • 1 fresh lime
  • 2 teaspoons sugar (or simple syrup to taste)
  • Ice

Optional garnish:

  • Lime wheel
  • Fresh mint

How to Make It

Step 1: Prepare the Lime

Cut the lime into wedges and place them in a sturdy rocks glass.

Add the sugar.

Step 2: Muddle

Gently muddle the lime just enough to release the juice and aromatic oils.

Avoid crushing the peel too aggressively, which can introduce bitterness.

Step 3: Add the Grogue

Pour in two ounces of grogue.

Fill the glass with ice.

Step 4: Stir

Give everything a good stir until chilled.

Garnish with a lime wheel or a sprig of mint if you’d like.

Then…

Slow down.

Take that first sip.

One thing I’ve learned is that the atmosphere matters just as much as the drink.

Dim the lights.

Put on some Sara Tavares, Cesária Évora, or Tito Paris.

Forget about your phone for a while.

A good cocktail isn’t meant to be rushed.

Neither is a good conversation.
